Protein percentage
Corned beef ranges from “lean and meaty” (14%+ protein) to “fillers and seasoning” (under 8%). A higher protein percentage is generally a better product — and a better margin opportunity for retailers because shoppers can taste the difference.
Fat percentage
Quality corned beef stays under 35% fat. Above that, the texture is mushy and the flavor reads as greasy. Below 18% can feel dry. The sweet spot is 22-30%.
Spice profile
Some markets prefer milder seasoning (Egypt, GCC). Others want a bolder, smokier profile (Levant, North Africa). The right choice depends on the customer.
Halal certification
