What is HACCP — and Why It Matters in Meat Manufacturing

HACCP — Hazard Analysis and Critical Control Points — is the international standard that turns food safety from good intentions into documented, verifiable practice. It is the system behind every TAIBA can on a partner shelf.

What HACCP actually does

HACCP identifies every point in a production process where something could go wrong — biological, chemical, or physical hazards — and puts measurable controls in place to prevent it.

For a meat manufacturer like TAIBA, that means asking and answering questions like:

• What temperature must our raw meat arrive at?
• How long can it sit before processing?
• What pressure and duration must our retort cans reach?
• Who verifies it, and what records do they keep?

The seven HACCP principles

1. Conduct a hazard analysis. List every realistic hazard at every step.
2. Identify critical control points (CCPs). Where, exactly, can a hazard be stopped?
3. Establish critical limits. Numbers, not opinions — temperature, time, pressure.
4. Establish monitoring procedures. Who measures, how often, with what instrument.
5. Establish corrective actions. If a CCP fails, what happens to the batch?
6. Verification. Is the system actually working?
7. Recordkeeping. Documented evidence — for every batch.

Why this is non-negotiable for export

HACCP is not just good practice — it is a legal requirement for export to most international markets. Without HACCP certification, a meat product cannot move across borders. Period.
